Cauliflower pizza crust and toppings recipe (gluten-free, grain-free, nut-free, low to medium oxalate, Paleo/keto)

Today I’m sharing a really delicious cauliflower pizza crust recipe from Megan Gilmore of Detoxinista (the pizza crust recipe is unchanged and perfect just the way it is), my variations on toppings and some additional information on oxalates.

I do acknowledge, as far as pizza goes, my toppings are rather unconventional but I’ve never really been a big pizza lover (there, I said it!) But I do love cauliflower – it’s my favorite veggie – and I was excited when my sister told me about this recipe and then made it especially for me when I visited her and her family in Hawaii recently! Aren’t I spoiled?!

The fact that the cauliflower pizza crust is low oxalate makes a huge difference: the only ingredients are cauliflower, goats cheese and an egg. I’ve seen other cauliflower pizza crust recipes that include a nut flour such as almond flour. That would be a no-no for me and someone with dietary oxalate issues because almonds are high oxalate.

My topping included: a light smearing of tomato sauce, chunks of chicken (left-overs from the night before), a few halves of tinned artichoke and a few halved olives. I added all this to the prepared cauliflower pizza crust and heated it for 10 minutes.

Once it came out of the oven I loaded it up with freshly cut avocado, pieces of fresh basil and chunks of mozzarella cheese. I don’t like melted cheese and have a hard time digesting it so I prefer to add it afterwards. I think I’ll try feta cheese next time for a change.

I personally have dietary oxalate issues but right now I am doing well with a little tomato sauce, a few artichokes, a few olives and some fresh basil (as long as that is all I’m consuming that day in the way of medium oxalate foods). It’s best to figure out your own needs based on your oxalate issues and what you know you can tolerate.

The cauliflower pizza crust recipe from detoxinista

Here is the recipe for the perfect cauliflower pizza crust from Megan Gilmore. I have permission to only share the ingredients: cauliflower, egg, goats cheese, oregano, salt, and a pinch of black pepper, and photos from the site but you need to go to her site for the recipe instructions. It’s well worth it to see how it looks at the various stages. I’ve included a few of Megan’s images below.

I will add that my sister doesn’t have a food processor and just cooked the chopped cauliflower and then used a stick blender to get it looking like this.

Once you add the egg and goat cheese it will have a texture and consistency like this. This is done after you have squeezed the liquid out of the cooked cauliflower – a crucial step for a firm and crunchy pizza crust.

Check out Megan’s site for other useful images, especially to see what the cooked crust looks like. One tip from my sister: once the crust is golden and crisp, flip it over and cook it another 10 minutes.

You’ll see there are also some variations with no goat cheese and no egg. If you try either of these please do share how they turned out.

Enjoying family, nature and a cauliflower crust pizza

After a gorgeous evening with my sister and brother (they were camera-shy!) at Kona on the Big Island, we got back home and ate delicious pizza on this home-made cauliflower pizza crust!

It was all prepared in advance – the crust and all the toppings – so we just put it all together based on our own likes and munched away. And boy did I rave about it – so much so that I said “hey take photos of me eating my pizza and I’ll share my my community”

As you can see it’s a pretty firm crust and holds up well with all the toppings I added to mine. And yes my shirt matches the pizza topping – unintentional but still fun!

It’s also really nice to eat something crunchy with a pizza-crust-like texture. If you’re gluten-free and grain-free I’m sure you can relate! And it tastes lovely.

Of course you can make it with conventional pizza toppings too. And I think you could use the pizza crust as crackers too. I plan to make a double batch and try this and freeze them.

Dietary oxalates and the problems they can cause

This blog post is a helpful one to start with if you’re new to dietary oxalates and the issues they can cause – Oxalate crystal disease, dietary oxalates and pain: the research & questions.

These are the common medium-oxalate and high-oxalate foods that many folks have problems with: nuts, nut-butters and nut-flour (especially baking with almond flour and something to watch when eating Paleo or GAPS), wheat, chocolate, kiwi fruit (very high – see the raphides image on the above blog), star fruit (also very high), beets, potatoes, sweet potatoes, legumes, raspberries, spinach and soy.

In the above blog post, I share an overview of oxalates, my pain issues with dietary oxalates (severe foot pain and eye pain), and deeper dive into the condition called oxalate crystal disease (with some of my insights and questions).

The big take-aways are that calcium oxalate crystals are sharp and can cause far reaching harm beyond pain – such as unresolved anxious feelings, thyroid issues, neurological symptoms, eye issues, hearing loss, bladder issues, headaches, fatigue, sleep issues, restless legs, autism symptoms and more. You can have issues with dietary oxalates and not have kidney disease/kidney stones, although there is very little research supporting the latter.

I’m finding dietary oxalate issues to be underappreciated especially in menopausal women when symptoms can show up and be more severe. And there is a strong connection with gallbladder issues and problems with fat digestion, which becomes more of an issue in perimenopause and beyond.

Gingerbread Coconut Muffins (a gluten-free/low oxalate recipe)

If you have gluten sensitivity or celiac disease and/or dietary oxalate issues (pain, anxiety, insomnia, restless legs, hearing loss, eye issues, unresolved thyroid issues, bladder issues and more) and yet really miss the occasional muffin this Gingerbread Coconut Muffins recipe is a delicious gluten-free and low oxalate option. I see way too many so-called healthy gluten-free recipes using almond flour.  This is concerning given that almonds are high in oxalates. Keep in mind that wheat is also high oxalate.

I’m finding dietary oxalate issues to be underappreciated especially in menopausal women when symptoms can show up and be more severe. If you’re new to the dietary oxalate issues you can read more below.

I have also found that using almond flour and other nut flours in baking affects your zinc/copper balance, increasing copper and hence causing more anxiety and even panic attacks.

If you don’t have dietary oxalate issues, you can certainly enjoy this recipe too. But watch the overindulging and binge-eating (more on that and using amino acids below).

Gingerbread Coconut Muffins (a low oxalate recipe)

Ingredients

6 eggs
1/3 cup melted butter
1/4 teaspoon salt
1/2 cup molasses
1/2 cup coconut sugar
2-3 teaspoons ginger powder (or liquid ginger extract)
3/4 cup sifted coconut flour
1 tablespoon ground flax seeds

Method

Melt the butter over low heat and add the coconut sugar and molasses. Once it’s cooled add the eggs and mix well. Stir in the coconut flour, salt, ground flax seeds and ginger powder.

Spoon the mixture into two greased mini muffin pans. Bake at 400 degrees F/ 205 degrees C for 12 – 14 minutes. The muffins will rise nicely and will start to turn dark brown. Remove and cool on a cooking rack. Makes 24 mini muffins.

Eat warm or when cooled. Serve with butter and/or cream and/or coconut butter. For a little added sweetness a small amount of raw honey can be spread on a muffin too.

My adaptation from a gingerbread cookies recipe

I adapted this recipe from a Gingerbread Cookies recipe in Cooking with Coconut Flour by Bruce Fife ND. I pretty much always do this when I cook – adapt recipes to my needs and likes – and always reduce the sugar. In this instance, I halved the sugar and used coconut sugar instead.

I also increased the ginger because I love all things ginger. I upped it from 1 teaspoon ground ginger to 2 teaspoons and will actually try 3 teaspoons next time I make them. Ginger can be an issue if you have oxalate issues so you’d want to see how much you can tolerate – so far so good for me. If you do have issues with ground ginger you could always use a liquid ginger extract which is low oxalate.

I omitted the cinnamon and cloves to emphasize the ginger taste. I also added ground flax seeds for added fiber.

I decided to cook them in mini muffin pans instead of making cookies on a baking tray but you could always try this option. Use the same temperature and cooking time per the original recipe.

The blackstrap molasses makes them so flavorful too and takes me back to my childhood. Molasses is nutrient dense too, providing calcium, magnesium, potassium, manganese, iron, vitamin B6, and selenium. Just be sure to use molasses made from sugar cane and not sugar beets (which are high in oxalates).

They were surprisingly soft and moist and eating them with butter and/or cream made them even more delicious. I always like to include some healthy fats. If dairy isn’t tolerated, coconut cream could be substituted. I suspect coconut oil could be substituted for the melted butter but have not tried this yet.

Here is Cooking with Coconut Flour by Bruce Fife ND. You can find it on Amazon here (my link). I’ve baked a number of recipes from this book and I’m impressed. I really appreciate that it’s all coconut flour recipes with no almond flour or other gluten-free flours used.

If you do battle with sugar cravings and binge eating – use amino acids

It’s ideal to keep baked goods – especially the ones shown on the cover of this book – to a minimum. But for an occasional treat this recipe book is excellent.

If you do battle with sugar cravings and binge eating, don’t forget how useful the amino acids are for stopping your cravings with no willpower and no feelings of deprivation. “I’m In An Abusive Relationship That I Will Never Walk Away From”: tryptophan, a gluten-free diet, lithium and other nutritional solutions

This mom’s story really struck a nerve for me… “I’m in an abusive relationship that I will never walk away from.” She shares this …

I can’t exactly pinpoint when I first felt the shift between our dynamic. One minute, things were as they always were. Before I could blink, though, I found myself engrossed in an alternate reality that resembled less and less of life as I knew it with each passing week. Trickles of rage and anger bubbled to the surface, threatening to break through until they could no longer be harnessed. I’ve been riding the waves ever since.

I currently exist in a heightened state of fear and anxiety, unsure of what each day will bring. When I wake each morning, I silently hope that today will be a “good” day; that he won’t be angry. That he won’t hurt me. Sometimes I’m lucky, and I get my person back. Other times, it feels like I’m living in a battle ground.

Her story really struck a nerve for me because of what she is going through but also because NO solutions are provided for her son. Stories like this help create awareness, make you feel less alone, create empathy and better understanding – which is important – but we want to offer nutritional solutions to families who are dealing with this.

Functional medicine and nutritional psychiatry as a solution

My heart goes out to this mom, this young man and the rest of the family. My hope is that this mom and all mom’s in similar situations are open to functional medicine, nutritional psychiatry and the power of food and nutrients to dramatically reduce and in many cases reverse behavioral issues like this in the child.

Sugar, caffeine and junk food must go and a gluten-free diet will very possibly make a difference. Having her son eat for blood sugar control is key too. It may also mean switching to a low-salicylate and/or, low-oxalate and low histamine diet. And addressing low lithium, low zinc, low vitamin D, low vitamin B12, high copper, low magnesium and/or low vitamin B6. Low serotonin and low GABA are common and this is where I would start with this young man (more on this below). They may also need to address his gut health/parasites, infections (like Lyme), PANS/PANDAS, mold toxicity, metals and environmental toxins etc.

I’ll highlight many of these in this blog and share links for further reading, plus the approaches I may consider. The important thing to recognize is that there is not one-size-fits-all.

Address low serotonin and low GABA

For a mom in the midst of all this, it can seem overwhelming and very daunting but when you start by addressing low serotonin and low GABA it becomes so much easier. Her son gets some relief very quickly and all the root causes can be figured out and addressed one by one. It also gives mom and the family a much-needed glimmer of hope. As I mentioned above, this is where I would start.

These are clues from her story as to why we’d want to look into and address low serotonin: her son’s explosive anger and rage, the physical and mental abuse, threats to hurt himself (self-harm) and his mother and siblings, and being argumentative.

You can see how the above fits into the list of low serotonin symptoms here. The amino acid that addresses low serotonin is tryptophan or 5-HTP and you can expect to see results in a few days.

I worked with an 11 year old girl with explosive rage issues (and anxiety, cravings & insomnia)  and chewable tryptophan started to turn things around very quickly. You can read more about this here.

If he has low GABA symptoms of physical tension and anxiety, we’d do a trial of GABA next.

A gluten-free diet and eating for blood sugar control

The next change I’d make is to have him start to make dietary changes, starting to switch to gluten-free eating and real whole food. As you can see from the above blog, a gluten-free diet and getting the 11 year old off the sugar made a big difference too. Tryptophan helped with this process, making it easy to break the addiction and not feel deprived.

Gluten issues (celiac disease and gluten sensitivity) are typically associated with gut issues but the psychiatric symptoms are less recognized. This 2023 paper, Psychiatric and Neurological Manifestations of Celiac Disease in Adults states that “Celiac disease is associated with mood disorders, such as manic-depressive disease, schizophrenia, and bipolar disorder, as well as other disorders such as depression and anxiety.”

In this blog I share how gluten was found to be the cause of a childhood case of obsessive-compulsive disorder. Symptoms resolved on a gluten-free diet.

Having him starting to eat for blood sugar stability may help with the irritability and mood swings, and may also help with his rageful outbursts.

Low dose lithium orotate for the rollercoaster of emotions

Next I’d likely explore the possibility of low dose lithium orotate as something that may help this young man too. The hallmark of low lithium is a rollercoaster of emotions and this mom shares how there are really good times amongst the really tough times.  I use this lithium questionnaire with clients. In addition to the ups and downs, these are clues that he may benefit: he’s rebellious, exhibits disruptive behavior and aggressiveness, is irritable, restless and engages in risky behavior.

Next steps: explore all the possible root causes and do nutritional testing

We’d want to explore all possible root causes and next steps would be decided based on his specific situation. Here is a list of 60+ root causes that I work through and the nutritional/functional testing that I do with my clients. You can replace anxiety with anger/rage in the blogs – for some people their symptoms show up as rage and for others it’s anxiety.

  • Bartonella infection in mom and both sons: anxiety, panic attacks, insomnia, inconsolable crying, irritability, ADHD, rage and pain
  • Christmas tree phenols as a trigger for anger, meltdowns, anxiety, hyperactivity, insomnia, aggression, self-injury and autistic symptoms? (dietary salicylates – a type of phenol – can cause similar issues)
  • Sex and Aggression Characteristics in a Cohort of Patients with Pediatric Acute-Onset Neuropsychiatric Syndrome “Among patients with PANS, males exhibit more aggressive behavior when compared with females” (typically the clue it may be PANDAS/PANS is sudden onset of symptoms, although it’s not the case in all instances)
  • Neuropsychiatric Lyme Disease by Dr. Suruchi Chandra Lyme disease “can remain dormant for years and then later mimic a number of psychiatric illnesses, including anxiety disorders, mood disturbances, psychosis, and autism-like behaviors.”

This is not a conclusive list but a good start for seeing what the possibilities may be. Feel free to search the blog for more on some of the above and some of the other factors mentioned above and in the 60+ root causes blog.

As you can see above, we start with the simple changes – amino acids and a few simple dietary changes (all covered in my book) and lithium orotate – and then continue to dig deeper.

Mom and the other children need nutritional/trauma support too

This mom and the other children need support too – from family and community, from a therapist who specializes in trauma – and with GABA/tryptophan, adrenal support and B vitamins. You can read more about nutritional solutions for psychological stress here.

Nutritional and Dietary Intervention for Autism Spectrum Disorder – a new study

The research confirms how effective nutritional psychiatry is for anxiety and depression (the SMILEs diet depression trial) so when a 12 month randomized trial reports the benefits of nutrition for autism spectrum disorder (ASD) we celebrate this too. Many of the same mechanisms that contribute to anxiety, can also play a role when it comes to ASD – such as food sensitivities, poor gut health, heavy metals, fatty acid imbalances and so on. Also, many children with ASD experience anxiety – 34 to 47% depending on whether you ask a parent of a teacher. Many adults with autism and Asperger’s syndrome also experience anxiety and overwhelm too. In one study 50% of adults with ASD experienced social anxiety.

This paper was published in March this year: Comprehensive Nutritional and Dietary Intervention for Autism Spectrum Disorder-A Randomized, Controlled 12-Month Trial and was

a randomized, controlled, single-blind 12-month treatment study of a comprehensive nutritional and dietary intervention.

Treatment began with a special vitamin/mineral supplement, and additional treatments were added sequentially, including essential fatty acids, Epsom salt baths, carnitine, digestive enzymes, and a healthy gluten-free, casein-free, soy-free (HGCSF) diet.

Here is the year-long protocol for the study participants:

Day 0: Vitamin/Mineral supplementation begins.
Day 30: Essential Fatty Acid supplementation begins.
Day 60: Epsom salt baths begin.
Day 90: Carnitine Supplementation begins.
Day 180: Digestive Enzyme supplementation begins.
Day 210: Healthy, casein-free, gluten-free diet begins.
Day 365: Final assessment of autism severity and overall functioning status. Final blood draw and urine collection.

And these are the guidelines for the dietary changes for the study participants:

  1. Adequate intake of a variety of vegetables (including leafy greens) and fruit (preferably whole fruit).
  2. Adequate protein quality and intake.
  3. Adequate, but not excessive, caloric intake.
  4. Minimal consumption of “junk” foods and replacement with healthy snacks.
  5. Healthy, gluten-free, casein-free, and soy-free (HGCSF).
  6. Avoidance of artificial flavors, colors, and preservatives.

Parents of participants reported that the vitamin/mineral supplements, essential fatty acids, and HGCSF diet were the most beneficial. And when asked at the end of the study which treatments they planned to continue at the conclusion of the study, over 85% of parents said the vitamin/mineral supplement and the essential fatty acids were the most likely to be continued, 70% planned to continue the Epsom salt baths, 63% planned to continue the healthy HGCSF diet, and 44% planned to continue using the carnitine and digestive enzymes.

I’m really pleased that they mentioned the following limitation because we really do need to address the nutritional needs of each person:

all participants received all treatments, whereas probably only a subset are likely to benefit from any single intervention (for example, only participants with low carnitine are likely to benefit from carnitine supplementation)…. future studies could try to determine which treatments were most beneficial, using the results of this study to guide those future studies.

Despite the above study limitation, the treatment group saw the following improvements:

  • Improved nonverbal intellectual ability
  • Significantly greater improvement in autismsymptoms and developmental age
  • Significantly greater increases in EPA, DHA, carnitine, and vitamins A, B2, B5, B6, B12, folic acid, and coenzyme Q10

Many of the study participants saw improved communication skills as well as improved daily living skills and social skills – all of which can lead to reduced anxiety and social anxiety, and improved overall happiness.

The authors do mention that the combination of all of the above treatments is feasible for most families and that there were minimal adverse effects. They conclude that:

The positive results of this study suggest that a comprehensive nutritional and dietary intervention is effective at improving nutritional status, non-verbal IQ, autism symptoms, and other symptoms in most individuals with ASD [both children and adults].

Julie Matthews, one of the nutritionists supporting the study

My good friend and colleague, Julie Matthews, was one of the nutritionists supporting the study and is one of the co-authors on the paper. I’m so proud of her contribution to this research which further supports prior studies and the work she does clinically.

Julie is the author of Nourishing Hope for Autism: Nutrition and Diet Guide for Healing Our Children and the founder of the Bioindividual Nutrition Institute. Shamus diagnosed with moderate to severe autism at age 2

Julie shares Shamus’ success story on her Nourishing Hope blog. He was diagnosed with moderate to severe autism at age 2.

When they began him on nutritional and biomedical protocols, his parents had no expectation of improved speech or ever “mainstreaming” their son. They just wanted him to sleep so they could cope with him being autistic.

Within 3 days of starting a gluten and casein-free (GFCF) diet his projectile vomiting stopped and his meltdowns reduced from 20 per day to just 3. The next step was the GAPS diet (Gut and Psychology Syndrome) which included broths and fermented foods, and did lead to worsening symptoms for a short time. Later on overgrowth of the harmful bacteria Clostridium difficile was addressed and other biomedical/nutritional interventions were included.

Today at age 10, Shamus shows no signs of autism and has been classified as “fully recovered!” He’s in a mainstream classroom at school, his teachers love him and he has a great group of friends. Shamus is great at team sports, and exhibits no problems in the classroom whatsoever.

I’m horrified that the doctor told this mom that she was over-anxious, had post-natal depression and needed to take an antidepressant (but that’s another entire blog post).

 

Both children and adults benefit from dietary changes

I find it very encouraging that the study participants were both children and adults with autism spectrum disorder and their ages ranged from 3 years to 58 years. Julie shares this inspiring and hopeful comment in the press release:

The study also shows that no matter the age of the individual with autism, diet and nutrition intervention can help. It’s never too late to be nourishing hope!

I agree, it’s never too late to make changes. This wonderful success story about an older gentleman with autism is just one example. Carolyn Gammicchia, mom/wife/autism advocate/ disability activist, shared the following on Facebook shortly after the study was published:

I have spoken to many people across the country who implemented this in older individuals, one man was 51 from TX who had been institutionalized and had not spoken. He was in very poor health when a wonderful lady took him in and somehow got my number and called me. She had seen a presentation I had done about five years ago about this and she weaned him off multiple medications, cleaned up his diet (went GFCFSF i.e. gluten-free, casein-free and soy-free) and supplemented with vitamins and minerals, plus exercise. He started speaking, lost 50 lbs, and is able to work now. It works!

Diet reduces anxiety and depression and helps with bipolar and schizoaffective disorder too

Going back to the study limitation – what this all means is finding the right combination of dietary and nutritional interventions for each person. There is no one-size fits all and bioindividualized nutrition is key – for ASD, anxiety, depression and any other condition.
