She has a new book <a href=\"http:\/\/www.amazon.com\/gp\/product\/1607742977\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1607742977&amp;linkCode=as2&amp;tag=wwwantianxiet-20\" target=\"_blank\"><em>The Healthy Mind Cookbook<\/em><\/a> and I can\u2019t wait to share our great interview.<\/p>\n<p>Until then I\u2019m sharing why I love this book and a wonderful recipe from her book, the pomegranate olive mint salsa.<\/p>\n<p>Let me share why I love this recipe book:<\/p>\n<ul>\n<li>It\u2019s all about food for the brain and how to have a healthy mind and great mood!<\/li>\n<li>I really appreciate the Culinary Pharmacy where the science behind the ingredients is shared. If you\u2019ve been following me for awhile you know I love the science!<\/li>\n<li>Rebecca\u2019s focus is on yum! The recipes are delicious and the flavors just pop! I would have to say that one of my favorite sections is the Dollops chapter. Rebecca says <em>\u201cthese dollops are snazzy surprises, acting as delicious high notes\u201d<\/em> and <em>\u201cmany of the dollops contain healthy fats, which work to make brain-boosting vitamins and minerals more bioavailable\u201d <\/em>(the recipe below is from the Dollops chapter)<\/li>\n<li>The food photos are positively mouth-watering (my only complaint is that there is not a photograph that goes with each recipe)<\/li>\n<li>She has a section on Reducing Recipe Reading Anxiety, where she shares how to use these recipes as a blueprint and how not to get overwhelmed when there are ingredients you don\u2019t recognize, can\u2019t find or don\u2019t really like. I\u2019ll share below how I modified this salsa recipe to my liking and how it still turned out great.<\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline;\">Pomegranate Olive Mint Salsa<\/span><\/strong><\/p>\n<p>1 cup finely chopped flat-leaf parsley<br \/>\u00bc cup finely chopped mint<br \/>\u00bd cup Kalamata or green olives, chopped<br \/>\u00bd cup finely chopped fennel<br \/>\u00bc cup pomegranate seeds<br \/>\u00bc cup chopped walnuts, toasted<br \/>2 scallions, minced<br \/>1 tablespoon extra-virgin olive oil<br \/>2 tablespoons freshly squeezed lemon juice<br \/>\u00bd teaspoon freshly ground black pepper<br \/>A pinch of sea salt<\/p>\n<p>Put all the ingredients in a bowl and stir gently to combine. For optimal flavor, cover and let sit at room temperature for 15 minutes before serving. For taste, you may want to add another squeeze of lemon or a pinch of salt.<\/p>\n<p>Makes: 2 \u00bd cups.<br \/>Prep time: 15 minutes.<br \/>Storage: store in an airtight container in the fridge for up to 4 days.<\/p>\n<figure id=\"attachment_3016\" aria-describedby=\"caption-attachment-3016\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-3016 size-full\" src=\"https:\/\/www.everywomanover29.com\/blog\/wp-content\/uploads\/2015\/04\/healthy-mind-recipe1.png\" alt=\"healthy-mind-recipe1\" width=\"300\" height=\"229\" \/><figcaption id=\"caption-attachment-3016\" class=\"wp-caption-text\">The picture from the Healthy Mind Cook book<\/figcaption><\/figure>\n<p>My comments and modifications to the recipe<strong>:<\/strong><\/p>\n<ul>\n<li>When I read the ingredients I was surprised about the quantity of parley and mint but used this amount anyway and the end result is incredibly yum! \u00a0<\/li>\n<li>We didn\u2019t have all the ingredients so we left out the pomegranates and used raisins instead, we replaced walnuts with almonds and I\u2019m not crazy about raw scallions so just left them out \u2013 and it was still amazing! This all ties back to the section on Reducing Recipe Reading Anxiety.<\/li>\n<\/ul>\n<figure id=\"attachment_3017\" aria-describedby=\"caption-attachment-3017\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-3017 size-full\" src=\"https:\/\/www.everywomanover29.com\/blog\/wp-content\/uploads\/2015\/04\/healthy-mind-recipe2.png\" alt=\"healthy-mind-recipe2\" width=\"300\" height=\"227\" \/><figcaption id=\"caption-attachment-3017\" class=\"wp-caption-text\">The first time we made it \u2013 served on salmon<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<ul>\n<li>We LOVE this recipe &#8211; it has become a standard in just a few short weeks. We have had it with both salmon and with lamb chops (it\u2019s the best mint \u201csauce\u201d for lamb)<\/li>\n<li>The salmon above was also one of the recipes in the book: Roasted Ginger Salmon, and was delightful.
